This past year, I have learned a lot about myself. I have pushed myself in discipline and strength when it comes to my daily workouts. I have fallen in love with spending time in my kitchen, trying new recipes and prepping for my week. The most important thing I have learned about myself, in my post partum healing, is giving myself grace when I want to enjoy a treat! The Cakery is by far the best dessert in Northern Colorado to satisfy that sweet tooth.
I met the Cakery when they had their sweet location in Downtown Wellington, and have followed them to their cozy spot in Fort Collins. Their cupcakes are simply divine. Always having their staples on hand with Vanilla Bean, Double Chocolate, Red Velvet, Tiramisu, Cookies and Cream, and Cookie Dough. They keep it fun and fresh with Rotating Flavors that make you want to come back for more.
With my sister in law in town, I took this as the perfect opportunity to have some fun and get a sweet treat in. I grabbed 4 cupcakes and two cheesecakes from the display case and headed straight home. You’re probably thinking…DAMN GIRL, that’s more than a treat! That’s a feast!! Let me start off by telling you that their cheesecakes are like their cupcakes…built to be individuals. But in our house, we share!
After dinner, we divided and conquered! We split up all the cakes, then we tasted and rated! Let’s get into it!!
>From Left to Right<
Tiramisu – Strawberry Cheesecake – Red Velvet – S’mores – Bavarian Cheesecake – Strawberry Cheesecake.
EVERY SINGLE CUPCAKE gets a 10 out of 10 on the soft texture of the cake!! Not one bite was dry! All of the frosting complimented each cake to perfection. From the texture, to the flavors, the softness, and just the right amount of sweetness…our compliments to the chef!!
The Cheesecakes were Golden Girls worthy. (If you know…YOU KNOW) Each cake was rich, creamy and absolutely decadent. The Bavarian Cream had a beautiful balance with the sweet Bavarian center and the rich drizzle of chocolate! The Strawberry Cheesecake was a beautiful welcome to the Spring Vibes we were feeling. The strawberry center was sweet, vibrant, and made every bite worth savoring.
10 out of 10 they have made a loyal customer out of me.
If you happen to be in the area of Front Range Village, swing by Council Tree Ave and show this shop some sweet love! Not only do they have delicious assortments waiting for you, they also cater to Vegan and Gluten Free appetites.
Life is a balance!! Take care of yourself and your health…but don’t forget to enjoy the sweet treats here and there. Enjoy those cupcakes!
